Ingredients

    Ingredients

  • 200grams cashews
  • 500grams water
  • 100grams powder Dutch chocolate
  • 100grams almond butter
  • 150grams sugar, preferably moscovado
  • pinch ofsalt
  • 4.5grams ultratex (modified tapioca starch)
  • Equipment

  • Blender (I use a Vitamix which is very powerful
  • Ice cream maker
  • Freezer

Instructions

Instructions

1Soak the cashews in the water for a minimum 3 hours, up to overnight.
2When the cashews are very soft, place them in the blender and process for a few minuts until you have a very soft, heavy cream like texture.
3Add the sugar and the almond butter.
4Add the salt and taste. Adjust the sugar level, remember that when things get really cold, they lose about 20% of their taste. With this in mind, adjust the taste until it is a bit sweeter than you would eat at this stage.
5Add the tapioca starch.
6Add the chocolate last, since it is stringent and will change the texture of everything if you put it on too early.
7Blend again, then pour into your ice cream maker.
8Process according you your ice cream maker instructions.
9Pour into a container, cover well, and place in the freezer until ready to eat.

Chef's Notes

Simple Perfection

This ice cream is really creamy, easy to make, and so delicious! The secret lies in soaking those cashews long enough - they transform into the silkiest base you can imagine. No dairy needed when you have nature's creamiest nut.

The Sweet Science

Remember that cold dulls sweetness by about 20%, so taste as you go and adjust accordingly. That slightly-too-sweet mixture will be absolutely perfect once frozen. Trust the process and your palate.

Chocolate Timing

Add the chocolate last - its tannins can seize up your beautiful cream base if added too early. Dutch-processed cocoa gives the smoothest result, but feel free to experiment with different chocolate intensities.

Make It Yours

Feel free to experiment changing the ingredients, the sugar level, the chocolate level, until you make it your own. Try adding vanilla, espresso, or even a pinch of cayenne for heat. This base is your canvas - paint with flavors!
