Ingredients

  • 100grams semolina flour
  • 100grams 00 flour
  • 100ml water

Instructions

1Mix the two flours together in a bowl.
2Create a "well" or "la fontana" as the Italians say, on your work table with the flour mixture.
3Pour the water in the center of the well.
4Using a fork, or your fingers, gradually mix the flour into the water, working from the inside out.
5When the mixture becomes too thick to work with a fork, start kneading with your hands.
6Knead the dough using a pushing motion with the heel of your hand until it becomes smooth and elastic. This will take about 8-10 minutes.
7Flour the dough lightly and cover it with a kitchen towel or place an upside down bowl over it to prevent it from drying out.
8Let it rest for at least 30 minutes before rolling.
9The dough can be rolled immediately after resting, or stored covered in the refrigerator for later use.

Chef's Notes

Simple and Effective

This water-based pasta dough gives us more predictable results than egg-based recipes. The combination of semolina and 00 flour creates the perfect texture.

The Traditional Way

Creating a 'fontana' or well is the classic Italian method. Make a crater with your flour, pour water in the center, then gradually incorporate the flour. I have found you can do this in a bowl instead of your table with equally good results

Versatility

You can use this basic pasta in a variety of ways, from fetuccini, to stuffed pastas, lasagna and much more.As always there is an infinite number of methods and ingredient substitutions that will yield different results.

Equipment Needed

The beauty of pasta is that you can make it with very little equipment. Although it is nice to have a pasta roller, you can roll it out using a rolling pin or anything else you may have available at home. We’ve actually, in a pinch, rolled out pasta using a broomstick!
